when making ganache.... can it be either heavy cream, or heavy Whipping cream.... does it matter? thanks!
30-36% butterfat is optimal. It can be done with slightly less but it affects the "texture" ...
I have used both heavy whipping cream and whipping cream and they both work just fine.
