So I finally went down to restaurant depot and they only had pastry flour. No cake flour! Where do you get cake flour? My grocery store sells 2 lbs for $3.49 and it's getting old.

On the flip side, RD has CHEAP cake boxes. icon_biggrin.gif

You may be able to get RD to special order cake flour for you. Or you could try the pastry flour and see how your recipes turn out, the gluten content is pretty close so you may not even be able to notice the difference (although you'll probably want to try a smaller package at a cake supply store before you buy the 50# bag).

I get my cake flour from cash & carry. Swans Down Hi-Ratio Cake Flour is what they carry at my location.

Thanks! I'll look there again. I didn't see it last time but I didn't look very hard.

And Jason, I was considering both those options. Thanks!

I had no idea you could make your own cake flour, apparently you just replace some AP flour with corn starch. Not sure how well this actually works or if you would want to rely on it in the long term.

I don't make cakes as often as many of you, but I have always made my own cake flour using exactly that method, and it has never caused a problem with any recipe. Because I do cakes relatively infrequently, it has never made sense to buy it, so I can't necessarily compare, but I know a great cake...and making my own cake flour has led to some pretty great cake!

Forgot to mention, I don't know how much you need, but I've only ever seen the 50# bags at cash & carry, though that's what I need so I haven't really looked for smaller quantities.

50# might last me a while but I expected to find 25# or 50# bags.
