Help! Dolphin Cake Sculpting

My husband and I are going to make our little girls cake tonight. I have a 12 X 18 sheet cake pan. We want to just cut out the dolphin shape. The cake won't fit in the freezer, to prevent crumbling when cutting the shape. Any idea's? PS...I know this sounds pathetic, but we are trying to save a few bucks and make our girl smile icon_smile.gificon_smile.gif

I'm sure those more experienced will chime in soon but I read in a book to use the sharpest knife you can get so the knife isn't dragging on the cake causing it to crumble.

Thank you so much...after much consideration, I think we are going to leave as a sheet cake and do the star tip in the shape of a dolphin on the top. Wish me luck icon_smile.gif

I don't actually freeze my cakes before I sculpt them...I just use a really sharp knife. The reason I don't freeze them is because I have a side-by-side fridge/freezer and most the time it won't even fit into the freezer! So far no problems!
