Sheet Cake Help, Please!

I do a lot of sheet cakes, and I am getting really frustrated! I don't seem to be getting much better at icing them or decorating them. They just don't have the elegant look of a layer cake, and they are a pain to ice. I have watched a million tutorials about icing cakes, but they are all on gorgeous tall round cakes. I can't seem to apply what I see.

Does anyone have any tips or tricks? If you don't do sheet cakes, what size/shape cake would you do to feed 30ppl? Help please!!

I use the upside down method. Gives you a nice smooth top and sharp corners. Just google it for a tutorial.
