I wanted to try out a technique this weekend that I've seen on several cakes - but I can't find it now!

It looks like a ribbon kind of, I think you take the tip and swirl it back and forth- it's done vertically or horizontally, very pretty! I never paid much attention to the name b/c I was going to research it and try this weekend- now I can't find it!

Does anyone know what I'm talking about? And what tip is it? And any trick to it?

It's the 104 tip you use to do it, just put the fat end of the tip against the edge of the cake. Be warned though, you might feel like you've developed arthritis after you've done this technique for a while. icon_wink.gif

Do you know if it's buttercream work, or fondant/gumpaste??

Actually, that wasn't my picture I posted, I just searched for "ruffle" in the gallery when I realized I hadn't posted one of my own using this technique. (I just added a carrot cake picture I had forgotten I had though, so at least I can legitimately claim my own picture now. thumbs_up.gif )

For my carrot cake, I used cream cheese icing, but you could use any buttercream. I would probably shoot for a medium consistency, because anything too thick will make your hand fall off. I also did a 2-tier baby shower cake in this technique, and although my hand was killing me, I've got to say, this is one of my favorite quickie techniques for covering a cake. (The rosettes are my other favorite.)

Thanks, I like your off-center pattern on the ruffle design! I am going to do a cake and incorporate the ruffles with the rosettes since it's a practice cake and I want to try both out... I'm terrible at piping though, so I am sure I will end up scraping it off at least once!

So tip 104 and 1M...and for rosettes, you just make two circles, right? Thanks

I made this cake a couple of months ago. The ruffles were just piped with tip #103 with the big opening facing you

Yes, tips 104 and 1M. You can also just use a smaller open star tip for smaller rosettes too. And yes, the rosettes are about two circles of buttercream. You'll pick up the groove quickly if you just practice on some scrap parchment paper or something similar. Good luck!!
