I prefer the satin ice. It is always easy to work with. It just depends on what the project is. For quick just a few accents I use the less expensive wilton because it is easy accessable, our area I need to order or travel to get any other brand of fondant, and Satin Ice is the easiest to find and comes in great colors.

Also like the choco pan products.

I had a client who demanded that I use the fondx ..yep... that is what she wanted, yet this person is not a cake baker... so I don't know how she came about. But I was not pleased with the consistancy.. it was stiff and dry and just horrible to work with.

I live in a crazy dry climate - I like Satin Ice wwaayy better for the same reasons as listed above. (if i'm not using MMF)

I prefer Fondx. I had a heck of a time covering a three tier cake with Satin Ice. The fondant looked like cracked elephant skin. I covered nine cakes with Fondx with no problems. It was less expensive and wonderful to work with.

I prefer Fondx. The Satin Ice cracks a lot, dries out quickly.
