Hi -
This is Rose. My gumpaste ribbon was cracking when I tried to roll it thin in my pasta machine. I had been trying out gluten-free recipes which all call for some type of gum to replace the gluten in the flour. I just tried adding some gum tragacanth to the gumpaste and it rolled like a dream! No cracks! Also, I cut my ribbon to shape on a long piece of cardboard then just carefully roll up the gumpaste ribbon itself -- I've never had any problems with it sticking to itself.
