I'm sure this is simple for 99% of you, but when you're making a mound of roses on top of a cake, do you mound up a pile of buttercream to arrange them all on?

This is for the top 5" tier of a wedding cake. I was all psyched out to do a castle top (basically I can do what I want) but the bride just gave me some ribbon to put around the cake and it will be way too much to have this ribbon and the castle. I think my surprise just got scratched. (She is the opposite of a bridezilla - she would've been content with an 8" round) So I'm back to roses. At least I know I can do roses. The castle was kind of exciting though. Some day just for fun I'll have to try one.
