My work has over 100 buche de noel leftover from Christmas and I am trying to come up with ideas for decorating them that is non-Christmas. Any ideas?

Well since we are in the dead of winter you could ice them in white chocolate ganache and decorate them with fondant snowmen or winterberries. They will be "winter" but not Christmas.

What about decorating it with "mushrooms" and greenery to make it into a woodland scene?

I agree, woodland forest, squirrels, acorns, beavers, chipmunks, wildflowers, a bear sleeping with his head propped on a log (winter hibernation), a woodpecker, a birds nest

how about a little girl and boy holding hands sitting on a log with their initials carved in it
