i am finding that my completed cake pops are sliding down the stick in the humidity and heat in Australia, how can I stop this. I attach the stick to the cake pop by dipping in chocolate and allow to set prior to the final dipping.

Try keeping them refrigerated when you're not working on them. I find that I have that problem too if the cakes are not cooled enough and then dipped in warm chocolate. It can get to be a bit of a pain I find. I roll them, refrigerate them. Then dip them in chocolate and refrigerate them again.Since you are in a warm climate I would keep them in the refrigerator even after they are wrapped and completed.
