Freezing Cream Cheese Frosting

hi,
i have two questions,
1. i have small butter lumps in my cream cheese frosting, apparently it didnt beat well, how can i fix it?
2. can i freeze cream cheese frosting for a month?

Hi Nadia,

1. Let the icing get soft then press down on every darn little lump of butter.

2. I've frozen cream cheese icing for up to six months with no problems. But I have a manual defrost freezer that keeps a constant temp of -10 degrees.

Yes, I have frozen leftover cream cheese frosting for over 2 months..... let it thaw in the fridge overnight before using it. Tasted perfect to me.

Just make sure the container is tightly sealed.

You can also pass the icing through a sieve to get rid of the lumps.

great, will just pop it in freezer, was feeling so bad for making loads extra of this expensive cream cheese. Ok i was wondering which recipe do you use for cream cheese frosting, any pointers? Thanks alot
