Help! I forgot I loaned out a couple of my mini cupcake tins, and I have 8 dozen to make tonight, and only have 2 pans in my house. Can I put the batter in the fridge (box mix) and use it in the morning when I get my pans back? Or am I looking at a late night, using just 2 of my cupcake tins? (The batter is already mixed, because a sheet cake is already in the oven. I just now realized I'm missing my pans, when I went to get them out of the cabinet.)
i have stored batter before and had no problems... just mux it back up when you go to use it... good luck!

I have put batter in refridgerator as well as frozen it and had no problems with either situation.
I had heard that freezing was ok, but wasn't sure on the fridge. I put saran wrap on the surface of the batter and put it in the fridge. I sat it out for a few minutes, gave it a quick stir by hand, and put it in the cupcake tins. It was perfect!
