Sorry for what may be a dumb question, but I live in California where the trans fats ban is alive and well and I'm unclear on whether ALL high ratio shortenings have trans fats. I did a Google search and found a link to some shortening on the Baker's Kitchen website http://www.thebakerskitchen.net/zerotransfaticingshortening.aspx that says it's a "Zero Trans Fat High Ratio Icing Shortening." However, I sent an email to a company I buy cake supplies from and they said "all high ratio shortenings have trans fats." Confused!

Thanks.

We use Sweetex Z, it is a high ratio shortening that does not contain trans fats. You can buy it in bulk from Bakemark, a regional distributor.
