I make chiffon cake for my regular birthday cake and my clients love it. But it does not hold up well for carving cakes like a handbag cake. Want to use a firmer cake but I have always thought pound cakes are too dry. Can you recommend a good cake for carving which is moist and tender but holds up well to carving?

WASC works well for carving. A scratch cake with a high fat content (butter or shortening) cake is going to be more dense. I also like pound cakes, they are not necessarily dry, it depends on the recipe (I really like the one from Whimsical Bakehouse). Always make sure your cake is cold when you carve it, it helps a lot.
