Hi there, I will be doing my very first fondant cake today. I made vanilla cake and placed them in the fridge. I know the cake must be in room temperature then apply frosting. After applying the frosting, let it chill in the fridge so it will firm up then apply the fondant. Correct?
My other question is, after applying the fondant, can I put the cake in the fridge overnight? The frosting is vanilla bean buttercream frosting. The cake is for Saturday.

I don't wait until the cake is room temperature to frost it. I'd just frost it out of the fridge, then once smoothed, re-fridge it so the icing is nice and stiff, then put fondant on.

If your buttercream has meringue in it, yes, refrigerate the cake. If it is a shelf stable buttercream, then you can leave it out at room temp.
