Hi, I am making a cake for Sunday. My schedule this week has been crazy so I decided to make the cake ahead of time and freeze it. I have never done that before. My question is when I take it out of the freezer on Fri to decorate it do I let it thaw or do I go ahead and ice it frozen? I am worried that there might be condensation when I put the fondant on.

Not a good idea to cover a frozen cake with fondant

So should I take it out and defrost it completely before I even ice it?

You can ice a frozen cake. I've done it with SMBC and whipped cream icings. About the time it takes you to ice, crumb coat it and add your final icing it should be ready to fondant the cake.
