I am looking for a video where a chef ices little round cakes with chocolate ganache and then dips a strawberry in cooked sugar to make a long hardened thread on the berry. Then he puts the strawberries on the cakes and the sugar thread points upward. If I find it again, I will be sure to save it.
Boy that sounds interesting! I've never heard of it though. Perhaps it was on YouTube? That's the only thing I could think of. Will be watching to see if someone has this info!
I've seen this in a Pastry book, maybe one of my textbooks, but not in a video. I would like to see it, too.
