Can I Use Cream Cheese Frosting Under Fondant

Hi,

I need to make a red velvet cake that would be covered in Fondant.

My quesiton is, can I use cream cheese filling and frosting on the cake and then cover it with fondant?

Do you think it will go bad if it stays out for more than 24 hours because it has cream cheese in it? The cake needs to be delivered on a Saturday. So, if I start working on it on Friday night, will it be good till Sat. evening?

How does fondant hold up under a cream cheese frosting?

Your help would be really really appreciated.

Yes cream cheese can be used under fondant. There are some recipes on CC that add meringue powder and other ingredients to make it stiffer to crust.

I do not leave cakes out of the fridge regardless of the frosting. However you will find on CC that others do this and that's their call. Since it is cream cheese, I really think the cake needs to be in the fridge and not left out for 24 hours at room temperature. If the cream cheese gets too soft due the amount of time left out, your fondant could start to buckle as the cream cheese settles because it has become very soft.

I personally have not had any problems with cream cheese under fondant.
