I am currently in the process of doin a fedora hat cake and wondering if I can carve the cake, dirty ice it and then freeze it? I am waiting on sugar sheets to come in for it. Will the cake dry out if I do this or should I just wait and carve the cake right before I ice it and cover it in fondant? Thanks in advance!

As long as you make sure it is wrapped properly there is no reason you shouldn't be able to freeze it after it is carved and iced.

OK. Thanks! Normally, it isn't an issue, but I have 2 cakes this week and family coming to town. Schedule is gonna be tight!
