How do I store royal icing and how far ahead can I make it (how long does it stay good?)

When I went to a cake decorating class they said if you're using Merriwhite (egg albumen substitue) you can store royal icing, covered for up to two weeks just at room temp. You will need to remix it. It will look like sponge when you come to use it again. So give it a good beat x
