Scratch Bakers-Organic Strawberry Powder In Strawberry Cake?

I just purchased this organic strawberry powder from nuts online. com: http://www.nutsonline.com/driedfruit/strawberries/organic-powder.html

What do you think about using this in a strawberry cake in addition to pureed strawberries? I think it would impart a nice pink hue and add a bit more strawberry flavor, too. I think I should treat this as flour but I am not sure if I could just add it to the liquids. What would you do? Do you think this is a good idea?

I'd try it without adjusting your flour first. While it is dry, it is not the same as flour. If you are adding a couple TBSP it isn't going to make much of a difference in the dry to wet ratio anyway. It is however going to add some acidity. I'd try it just as an addidtion first and see what it does to the cake.
