I have a request to do a cake with a creamy strawberry filling that is NOT buttercream. This is going to be a tiered cake covered in fondant so I can't do a whipped cream or mousse filling, I need something that is sturdy enough to hold the weight of the cake and can handle being out of the fridge for a few hours. Does anyone have any ideas?
I used this one substituting Frostin Pride or Bettercreme for the whipping cream. It was nice stable filling for my tiered cake. Once whipped Frostin Pride can be left out for up to five days. They strawberry Jello also helps stablize the filling. If you decide to give it a try make sure you let the jello dissolve completely before whipping. http://cakecentral.com/recipes/strawberries-n-cream-mousse/
