Deep Cake Tins ....help Needed :)

Hi Guys, hope you are all well. I have been making cakes for years but have always used shallow tins and baking sheets for my sponges and then layer up. I purchased a set of prof square tins last week as I have a large wedding cake to make. it is 3 tiers and all sponge!! Have tried several times in the last two days to bake the sponges in the new tins and what a disaster icon_sad.gif . They end up really shallow with big domes on top. I must have thrown away 10 batches of cake mix icon_mad.gif . Any suggestions would be appriciated. Thnak you Loopy x

Large sponges work better with two layers of thin cake, sandwiched together, rather than 1 deep sponge ..
