I need to make a sculpted football helmet cake for 25-30 people and also a smash cake to go along with it. What should I charge?

I think most people charge for the amount of cake prior to carving. Figure out how much ingredients will cost, how long and at what cost your labor will be, and then how much profit you want. Don't think of your time's cost being the profit either or you're selling yourself short. Hope that helps.
