How Long Before Serving Can I Make Decorations?

Hi!
Im planning to make a cake with figures on it, Hello kitty, hello kitty's cat and My melody.
This is gonna take a lot of time, and I was wondering how long before I can make the figures without them going bad or not tasty?
Im going to use MMF...
When the figures are done, should I put them in the fridge?
Can I start now, it's 2 week to my party..

Firstly, NEVER put fondant figures in the fridge. They will begin to droop once they come out because humidity will condense on the surface.

Since we're dealing with food here it's always best to make stuff as fresh as possible. However, you can get away with stuff like fondant as it's mainly sugar which acts as a preservative for the other ingredients. But only if you absolutely must.
