How far in advance do you bake your cakes? I usually bake my smaller cakes about 2-3 days in advance and larger cakes 4-5 days in advance just "in case" something needs to be fixed I have the time to do it. I'm just curious what everyone else does. Thanks

I have baked two weeks in advance because of a really busy month the cakes were great, no difference at all. I am baking two weeks early this week two because of another busy week coming up. I think Im going to keep this system sure takes the stress out of a busy week.

I agree! I was just curious what other people do because I scheduled a cake pick up for 2 days prior and the lady made a comment about "won't the cake be stale?" I've never had a complaint I just guess some people think you can whip up a cake the morning of and everything be flawless the first attempt!

Sorelle, do you bake and freeze for 2 weeks?

I always bake well in advance and freeze my cakes. 1) if you need to carve a shape its easier. And most of all 2) it saves time.
