My son is highly allergic to eggs. I am trying to find a good recipe for cupcakes that are egg free, so I can take one for him when we attend parties. I have tried using applesauce as a substitute and the cupcakes turn out very dense and muffin tasting. Has anyone used ener-g egg replacer in a cupcake recipe before? Or do you have any recipe suggestions for a light, fluffy cupcake?

I have an entire book of egg-free cupcake recipes called "Vegan Cupcakes Take Over the World". If you let me know what flavor you have in mind, I'll post one for you. icon_razz.gif

I agree, the best egg-free recipes I've come across are in the "Vegan cupcakes take over the world" with one adaptation. I typically use rice milk instead of soy for a lighter cupcake.

No eggs, no egg substitutes ..

WACKY CAKE
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup sugar
3 tbsp unsweetened cocoa powder
1 tsp vanilla
1 tsp vinegar
5 tbsp oil
1 cup water
Preheat oven to 350 degrees F. 12x cupcake pan lined with paper liners.
In a large mixing bowl, mix flour, sugar, cocoa powder, baking soda and salt.
Mix water, oil, vinegar, and vanilla in a bowl or jug. Pour over the dry ingredients, and stir until mixed. BATTER WILL BE THIN.
Fill each hole 2/3 full. Bake 15-18 minutes. Check if done before removing.
