Filling Question

Hi,

I am making my first cake for my daughter's 2nd birthday. It will be a three teir cake and I am planning on using cream cheesing filling but then buttercream outside the cake then put on a fondant. Will this cream cheese filling work? or will it make the cake fall apart?

It will work, but it will also require the cake to be refrigerated.

Thank you, I am planning on having in the refrigerator for couple hours before I need to take to the venue, could it sit out for three hours?

Yes. That's why I deliver cold cakes. First, it makes delivery easier and second it can come to room temp slowly before cutting. I don't cover with fondant and I use real butter butter cream so temperature is more the issue with me!
