exactly what is pectin X58 and is there a substitute for it? i found a mirror glaze recipe but it has that in it. Im thinking some type of gelatin but cant find any more info or details.

Pectin is not gelatine.

Pectin X58 is a "heat reversible thickening or gelifying texture agent with very well gelified elastic texture for neutral glaze application".

I found it online for 44 to 52.90 per kilo

There are different types of pectin that all to have their own purpose. One does not substitute for another.
