I'm making circus animals out of fondant but I can't get it smooth. It keeps cracking and breaking, any ideas on what I can do to make it smooth? or maybe a recipe for fondant that works great at molding? Any suggestions would be appreciated!
Try shortening! It helps to smooth out the cracks.
I always work a little modeling chocolate into the fondant when forming figures. Modeling chocolate has more of an greasy feel to it, especially when it's handled a lot. When you mix it with the fondant it keeps the fondant more plyable and you have a longer work time where it won't dry out. It does take a little longer to firm (I let mine set over night....sometimes two nights).
