Hi! I've looked through a few cookie recipes here but it's hard to know what the texture of the final product is without making a whole bunch of recipes. I'm looking for a soft and chewy texture similar to the Lofthouse cookies that you can buy in the store (plastic boxes of a dozen or so). I don't want a cake-like soft texture nor a crispy cookie (not like a gingersnap). Does anyone have a recipe they have tried that would fit the bill? I'd love to make some this afternoon. Thanks!

Here's my molasses cookie recipe...hope you like it.

3/4 cup butter or margarine
1 cup firmly packed brown sugar
1 egg
1/4 cup black molasses
2 1/4 cups self rising flour
1 tsp cinnamon
1 tsp ginger
1/2 tsp cloves

1/2 cup sugar to roll dough in-I like to use demerara cane sugar

Cream sugar & butter, add egg & molasses. Mix flour & spices. Add to butter mixture until all incorporated. Chill dough for 2 hours. When dough is chilled roll heaping tsp into ball. Roll balls in cane sugar. Bake at 350 for 10-12 minutes.

They are soft and chewy in the center and the outside gets a nice crunch with the sugar. My kids love them icon_biggrin.gif Hope it helps

Okay, the dough was so yummy, I decided to double it and make 2 batches! icon_smile.gif They're chilling in the fridge right now. Have you ever thrown in mini choco-chips or added a chopped nut to the recipe? Thinking that might be good, too.

When you say black molasses, is that blackstrap molasses?
