Hi,I was wondering if any of u tried to make MMF from scratch,meaning that u don't buy marshm. and then melt it but u make marsh.from scratch and then add icing sugar .The reason I ask is that I made it a year ago out of necessity because I couldn't fined marshmallow where I live and I've been making it ever since.It's delicious ,playable,stretchy,fast and easy and saves me a bundle . I feel much better making things from scratch because I know exactly what's in them icon_smile.gif

I have not, but would love to hear your recipe. I always buy the marshmallows.

this is how I make the Marshmallow:
ingredients:

1 cup cold water
3 Tablespoons (3 envelopes) unflavored gelatin
2 cups granulated sugar
3/4 cup light corn syrup or glucose (I prefer glucose because it's thicker )

U can add any other flavors like almond , lemon,orange.......also u can add your desired color at this stage.
Making the fondant:
Now that u have your Marshmallow u can proceed as usual with MMf.
for this amount of Marshmallow I usually need 1.6kg (3.5lb) of icing sugar
of course u'll have to grease your hands with v. shortening(2-4 Tsp)
