I am trying to search for wholesale sources for white chocolate (I'm very small time, but thought it'd be easier and a tad cheaper than buying white chips by the bag retail, or candy melting blocks from places like Walmart ).
How do I know how good white chocolate is??? I know there are really cheap brands like those meant more for candy making, but how can I tell what's best for ganache?
I use ganache only as a firm coating under fondant to get sharp edges. I think that matters, right?
I buy Guittard in bulk.
