I am going to be making a car and pickup with RKT and covering them in fondant to go on a cake. My question is: how far in advance can i make & cover them? It is for Sept 9th & will be a very busy week for me, so the earlier I can make them, the better. I just didn't want them to go bad. Also, can i keep them in the fridge or freezer without it messing up the fondant?

I just made an rk elephant, I made formed it 07/30 and covered it in a thin layer of candy melts. I did the layer of candy melts because it fills in the unsightly "bumps" of the rk. I stuck it in the fridge until 08/05, covered it with fondant. The party was 08/07, it's been sitting out on my counter since then while I'm trying to find a box so I can freeze it for future use. So, in short (too late!) yes you can make it well in advance!
