How Do I Make A Cake To Last 7 Days Before It Is Cut?

I recently received a cake order from a client who needs the cake in 3 weeks. The good new is that she wants a dummy cake because it wont be served. The bad news is, she wants the top tier to be a real chocolate chip cake which obviously is usually not a problem since I am a cake baker/decorator. The reason why this is a problem is because I will be out of the country on vacation when this dummy cake is being delivered and will not be able to bake the real tier. My assistant will also not be available. How cake I make the 8" tier layer stay fresh for 7 days until it's delivered? Help!!!

2-3 months is the amount of time that you can keep a cake frozen... keeping the flavor & texture intact. Yes, a cake can be frozen up to a year, but you have to wrap it up with more protection than you would need to wrap the cake you are asking about.
