Mini Cupcakes Storage Question

Hi There,

I'm making mini cupcakes for a Bday party I'm going to on Saturday.

I wanted to bake them all tomorrow as I won't have time on Sat morning. Is this possible - will they still be OK for Sat afternoon?

Should I bake them, leave to cool then pop in the fridge uncovered overnight or should I leave them to cool, ice with butter icing / choc ganache for the choc ones then leave in the cake box on the counter overnight....

What is best to do?

Yes, you can bake them on Friday. I usually bake on Friday for Saturday (if I can I try to do it as late in the day as possible).

You wouldn't have to put them in the frig overnight if they aren't frosted. I think you could ice them and leave them in the cake box overnight. I'm not sure what the "right" thing to do is, but I do put cupcakes in the frig overnight if they have cream cheese frosting or if it's hot and humid (despite the a/c being on). If there are ingredients that could spoil, I wouldn't leave them out.

Fab, thanks for that. Lets hope my silicone baking tray and mini cupcake wrappers arrive today otherwise I'm in trouble!
