I made four batches of ganache two and a half weeks ago, I have about a half a batch left and I was wondering if its still any good? It has been in the fridge the whole time.
(Honestly, I don't usually have left over ganache as its usually eaten straight away! lol)

Aw, cmon, I know everyone eats all the leftovers right away, but doesn't anyone know?

Thanks!

If it smells good...and it tastes good. Then it is good.
I freeze my leftovers.

I have used ganache left in the fridge for a couple of weeks. I usually freeze it if I'm not going to use it within a week, however...[/i]

I wouldn't put it on a cake for somebody else, but personally I'd have no problems using it on a cake for us to eat at home. If it smells & tastes normal it'd be fine.

As said above - if it tastes fine and smells fine - pop it in a container and freeze it

would ganache hold up on a hot day on a cupcake? probably not, huh? also, if I used poured ganache on layered cake in a jar, would it make the cake soggy? sorry, I don't know that much about ganache but would like to use it more in place of buttercream. Thanks!
