I want to expand my horizons, and go to either IMBC or SMBC. Which one holds up better for piping borders and flowers? I know that neither will hold up in the heat, but am wondering which is better if heat is not a factor. TIA.

I think IMBC,because the sugar is cooked longer...is more stable. I have done basketweave and borders .... not really tried to do many flowers.. I think that SMBC may be less stable.

I always add white chocolate to my IMBC so it may be more stable than "plain" IMBC.
