I am visiting family and therefore do not have access to my own tools. Can I make SMBC with the paddle attachment on a KitchenAid, or will it be too dense and heavy? Will the meringue not stiffen up? I have not tried this before, and so was hoping for any advice. If using the paddle mixer for the entire recipe will be a bad thing, I do have recourse to a hand held mixer.

Thank you for any help!

Here's what I do....I whip the whites with the wisk and than switch to the paddle when I'm adding the butter.

If you can't get the whites stiff enough with the paddle, use the hand mixer for that part and than use the kitchenaid with the paddle for the rest of the process.

Thank you, cakestyles. I will do that. I had been looking to avoid the hand mixer if possible, but your recommendation sounds like my best option. Thanks!
