My niece is having a baby shower next weekend and has asked me to bake a carrot cake for the party. Unfortunately I will be out of town and was wondering if anybody has had good luck freezing a carrot cake with cream cheese filling and frosting? I am afraid that the icing will get too wet and soggy once thawed.

Wholesalers ship frozen carrot cakes all the time... they thaw fine, just like any other cake.
