Wedding Cake For 250

OK, so the bride wants a small 3-tiered square cake and two 1/2 sheet cakes to go on either side of it or on another table. The 1/2 sheet cakes will be included in the 250 servings and the top tier of wedding cake is for her & the groom of course so what sizes do the wedding cake tiers need to be?

And if anyone has any tips on how to cover square cakes in fondant lay them on me because this will be a first for me!
