Peanut Butter Dairy Free Cake?

I am visiting a friend at the weekend and am planning on making her a (scratch) cake and have this craving for peanut butter at the moment so I would love to make it a peanut butter cake... the problem is she is lactose intollerent and can't have soya either and saturated fat needs to be kept as low as possible. Is this a possible task?
Could I just sub out regular milk for rice or oat milk?
Should I just make her another cake from the recipes I have and make the peanut butter cake for me/others another time?
