I am doing a wedding cake with 15", 11" and 8" square pans. First are these good sizes for a wedding cake? Would you use a heating core for the 15" cake? What size drum should I put the cake on, would 18" be big enough?

Good sizes? That depends on how many servings are required.

I never use a heating core... personal preference.

18" drum works. I like 4" larger boards... 3" larger is close enough (probably can't find a 19" drum, and 20" would look too big).
