Hello everyone! I have a client who doesn't really want fondant covered cake.. and tghey would like the quilting effect on their cake still. My buttercream that i make doesn't usually crust, and I'm thinking about trying a recipe out. But how hard does it crust? I have visions of the icing crunching as they're cutting it and the texture is off when they eat it.. but I think I'm over thinking this...

The crust is enough that you can apply light pressure (as you would to do an impression or Viva method) but it does not get hard or crunchy, its just not "fluffy"
