My nephew is in the Chicago area and planning a wedding for next summer. He asked his dear aunt (me), a home/hobby baker in FL, to make his wedding cake. However, in searching for reception venues, they are finding most have a list of preferred or exclusive caterers, or at the very least require proof of license and insurance. I understand that liability, insurance, and reputation are all issues for these locations. I would like to be able to do this for him as a gift for sentimental reasons, but don't know how to advise him or if it will even be possible. Are there places to hold a reception that would allow this? Would it make a difference if I were able to rent commercial kitchen space? Thanks in advance for any help and advice you might be able to offer.
