I use this recipe all the time with great success-
6 oz Baker's Semi-sweet chocolate
1-1/2 cups heavy cream divided

Chill bowl and beaters in freezer
Break chocolate up in medium/large glass bowl
pour 1/4 cup of heavy cream over chocolate
heat in microwave. I heat in 20 second incriments so as not to over do it. Take it out and stir after
each time. Once chocolate is completely melted and stirred into the cream, let sit at room temp for 20 minutes. Beat the remaining 1 -1/4 c of cream. Whisk the cream into trhe chocolate and refridgerate until ready to use.
