Does anyone know if carrot cake with pineapple need to be refrigerated? I have a bride that wants this and it is an outdoor wedding wih 90 degree temp.

No, it doesn't need to be refrigerated. My carrot cake with pineapple stays out for days and the flavor actually improves after a day or 2.
