I have a bride who wants cheesecake as her grooms cake and she wants it to be a few tiers high. She wanted cheesecake in fondant that way it looked like a cake from the outside, but I told her I wasnt sure that would work because of the weight of the fondant on the cheesecake. I told her maybe I could pour ganache or some chocolate in a liquid form over the cake so it would have that smooth surface that a fondant cake would have? Can you even cover a cheesecake in fondant? If I pour ganache over it and stack the layers will that work just like stacking a cake?

I put fondant on cheesecake just a couple of weeks ago for a bride. I didn't stack them - just had one out with fondant and flowers. Chilled the cheesecake for 24 hours, then covered in plastic wrap and put the fondant on. It was really easy and no problems.
