I have lemon jello pudding/filling mix that I want to use to make lemon filling for a cake. My searches are not pulling anything up! There has to be something here!?

Does anyone know of one? Thanks!

Mix your pudding mix (not jello right) with some Rich's Bettercreme for a tasty lemon mousse that is shelf stable for a few days. It will hold up in the heat as opposed to a whippped cream mousse.

This is a frosting recipe but you could use it as a filling by reducing the amount of milk or adding more powdered sugar.

I have made this recipe and sometimes add cream cheese or marshmallow fluff to it. I also always add a pinch of salt to my recipes. Since you are using lemon pudding, you could try adding some lemon extract to taste.
