Long Chocolate Shavings

I've tried to make the longer white chocolate shavings with a carrot cutter and they all come up very wrinkly and short. Does anyone know how to make them smooth and long? I was at a bridal shower and they did this on a cake-looked and tasted amazing.

I use my stand up grater and use the side where the holes are bigger.Use long strokes and the chocolate should make long pieces.It is also best if the chocolate is room temp as opposed to cold.

I think Norm/Shane used a round fondant cutter to make large curls with on one of the cake challenges. It curled when he twisted his wrist, so maybe if you don't twist you can get a long flat piece.
